Baking Step:
- Dissolve earl grey tea powder in water.
- Mix Group 1 ingredients for 1 minute at low speed.
- Scrape down the sides of the bowl to ensure no lumps are sticking.
- Change to high speed and mix for about 7 minutes.
- Gradually add in Group 2 and blend at slow speed for about 30s – 1 min.
- Add 80g batter to 4-inch round cake tin.
- Bake at 170 0C for about 17 minutes. Baking conditions vary depending on batter scaling weight and oven characteristics.
- Remove from oven and let it cool.
